Marinated olives Recipe

These highly savory Marinated olives are perfect as a starter or snack.
 
 
 
 

Ingredients (serves 8 )
1 cup (160g) black olives
1 cup (160g) green olives
2 strips lemon rind, thinly sliced
2 strips orange rind, thinly sliced
2 garlic cloves, thinly sliced
1 green onion, finely chopped
1/4 cup Lupi extra-virgin olive oil
2 fresh thyme sprigs
 
Method
Place olives, lemon rind, orange rind, garlic, onion, oil, and thyme in a bowl. Set aside for 4 hours, stirring occasionally, to allow flavours to develop. Serve.
 
Notes
