Hi Joe
It may be sacreligious living in Spain but one of my favouite recipes for curing olives is actually from the Lebanon. There is a nice subtle kick to the recipe. It is probably a bit long to post here but you can find it through my sig . I am very fussy when it comes to cured olives but my Wife makes these from our black olives and it is fantastic.

"Olives:  Safe Methods for Home Pickling"
It can be downloaded for free or they will mail a copy to you cheap.
