Nez organic farm in Morocco

Hi everybody,
I have started an agricultural project in Morocco, willing to be organic and sustainable.
I am plenty 6 meters by 5 on 40 hectares.
I am not sure with varietal to plant. I would like to use moroccan varietals but I have been told that the crop will be not stable every years, so I have been advised to plant Picholine du Languedoc as well.
I woud like to have some advises of which varietal would work best.
