pollination of self sterile varieties

hi!

on some sites I read that there are special pollinator varieties for self sterile varieties.
how important is it to plant the special pollinator varieties? I'm planning to plant several varieties, so does this also assure pollination? is blooming time time so much different?

another question, can oil varieties generally can also cured for eating?
