Hi all, I am new here.  I moved into a house about 6 years ago that has over 300 olive trees.  Over the last few years, I have been contemplating on doing something with them, and this year I am finally going too.  Here are my questions.

1. I have absolutely NO idea as to the type of olives they are, is there a way to specifically tell.  I think you can tell by the fruit, but since they are just growing the fruit for the season, I cant tell.  Can you tell by the leaves?

My second question is, I make goat milk soap, and my main ingredient is olive oil.  I am in Southern Ca, San Diego to be exact, and I would like to find a way to produce olive oil from my trees to save me from having to buy it from the store.  Are there olive oil factories that will allow this, like if I brought some olives, would they make it?  If so, how much does something like that cost?  Can I do it at home?

And third, what are some of your procedures for curing them for table eating?  And then once cured, what kinds of herbs do you use for flavor?  How do you pit them for stuffing with cheese?  There is a lady I know who makes cheese, so I thought that would be an interesting idea.

Anyway, I think that is enough from me right now in the way of questions, but thanks in advance for any help, as I am totally clueless!
