They say it can't be done, but I have created an entire book of desserts made with Olive Oil. People from all over the place have been pleasently surprised at how great they taste. Especially because there is no compromise in taste or texture. Only a delicious dessert with 1/3 less fat. And the fast is monounsaturated. The good fat!!! My cookbook, Olive Oil Desserts is filled with ; cookies, cakes, pies, and crisps. I even have a recipe for the most amazing, easy to make pie crust. Does anyone want a free recipe? I am happy to share. Tell me your favorite dessert and I see what I have or what I can whip up.Thanks Olive Oil Chic.

I have had such a great initial response to my cookbook. I have been working on these recipes for about four years. They are all simple traditional desserts. Some of the recipes are also made with yogurt, or buttermilk. By using yogurt and buttermilk, I was able to cut fat and calories even more. These recipes are so soft and flavorful; I rarely have needed to use frosting. I use a lot of dustings, glazes, and sugars which also helps to lower calories and excess sugar. I would encourage you to visit my website and try out a recipe or two. If you click on my picture you can view a demo and get the recipe for my “Soft Ginger Roos". I would love to help anyone convert their favorite recipe. Although most recipes use about 1/3 less fat, it is not a perfect science. Depending on the recipe, the amount of Olive Oil needed varies .

If anyone is interested, I will be making a radio appearance on grapevine radio sometime next week. I will send the link when  I receive it.

As many of you may know that trans-fats and hydrodgenated oils have been in the forefront of the news lately. It has become a huge concern to so many here in America because Heart Disease is the number one killer .
As I travel around I am asked quite often What is trans-fat? I would like to share that information  on this post.

Trans fat (also called trans fatty acids) is formed when liquid vegetable oils go through a chemical process called hydrogenation, in which hydrogen is added into the oils to make them into a solid. Food processors use Hydrogenated or partially hydrogenated oils because they cause the foods to have a longer shelf life and give the food that they are in to have a desirable taste and texture.

Mostly, trans fats are found in shortenings; margarine, cookies, cakes, crackers, snack foods, doughnuts, pastries, baked goods, pre-packaged snack foods, fried food and everything made  with partially hydrogenated oils. I like to refer to these as non-foods. Trans fat also occurs naturally in some meat and dairy products.  The FDA estimates that the average daily intake of trans fat in the U.S. population is about 5.8 grams or 2.6 percent of calories per day for individuals 20 years of age and older.

There is NO trans fat in Oilve Oil! and I might add that desserts made with Olive Oil Taste great!

Try out the below recipe and find out for yourself.

Chocolate Chip Banana Crumble Muffins

1/4 cup Pure or light Olive Oil
1 large egg, beaten
3 bananas, mashed
3/4 cup granulated
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup mini chocolate chips
 
Crumble Topping

1/3 cup packed brown sugar
3 tablespoons all-purpose flour
1/4 teaspoon ground cinnamon
2 tablespoons Pure or light Olive Oil
 
DIRECTIONS:
Preheat oven to 375 degrees F (190 degrees C). line muffin tins with 12 muffin cups.In mixer bowl, beat together olive oil, egg, bananas, sugar, and vanilla. In seprate mixing bowl, add 1 1/2 cups flour, baking soda, baking powder and salt. Fold flour mixture into moistened ingredients. Blend until just mixed. Fill muffin tins 2/3 full.
In a small bowl, mix together brown sugar, flour and cinnamon. Add Olive Oil and mix with a fork. Will resemble course meal. Sprinkle topping over muffins.
Bake for 15 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
