The logic in the Punjab was compelling on paper: the state’s endless wheat-and-rice rotation drinks staggering amounts of water, while an olive on drip irrigation needs a fraction of it. Whether the tree agrees is another matter entirely.

The water argument

The strongest case for the olive in India is water, and it is a real one. Rice and wheat in rotation are extraordinarily thirsty; a well-managed olive on drip irrigation can get by on a small fraction of that. In a region where aquifers are falling year on year, a crop that produces value on a ninth of the water is not a gimmick — it is a serious idea. This is the same appeal that has spread the olive to dry New-World regions, and it is why states keep coming back to the tree despite the difficulties.

Why it is harder than the brochure says

Then reality intervenes. The olive is slow: it fruits only after several years and reaches a real yield later still, so a farmer swapping annual grains for olives faces a long wait with no harvest. It needs winter cold to flower properly, and much of India’s plains run hot and humid — conditions that invite fungal disease and can leave trees leafy but barren. And when the fruit does come, someone has to press, cure, market and sell it into a country with little olive-oil habit. The tree can survive in surprising places; making it pay is the hard part.

India’s better-known olive push happened not in the Punjab but in the deserts of Rajasthan, with imported Israeli expertise and hundreds of thousands of trees. Years on, the honest verdict is mixed: some sites in the drier, cooler districts did begin to fruit and produce oil, while others struggled with heat, water and the sheer newness of the crop. It neither failed outright nor transformed Indian agriculture. That is the realistic template for the olive in a new land — not a miracle and not a flop, but a slow, patchy, decades-long negotiation between an ancient tree and an unfamiliar climate.
