Balsamico Chicken With Olives

4 Servings:

  • 1/2 Recipe Fricasseed Chicken (frozen or fresh)
  • 3 tb Tomato paste
  • 1/2 c Low-sodium chicken broth
  • 1/2 c Balsamic vinegar
  • 3/4 c Pitted green olives; drained
  • 1 tb Chopped fresh parsley

DEFROST THE FRICASSEED CHICKEN, if frozen. Arrange the chicken pieces in an oven-proof casserole or Dutch oven. Combine the tomato paste, broth and vinegar in a small bowl, and add to the chicken. Add the olives, cover and place in the oven. Turn the oven on to 375F and bake for 20 minutes. Meanwhile, place the fricassee sauce in a small saucepan over medium heat, and cook until it is thick enough to coat a wooden spoon, about 5-to-10 minutes. Uncover the casserole and strain the sauce over the chicken. Continue to bake, uncovered, another 5 minutes. To serve, arrange the chicken and sauce in a serving bowl or on a deep serving platter, and sprinkle with the parsley.

Virgin Olive, High in Polyphenols, Reduces Heart Disease Risk Factors

Another study about the healty Olives Oil:

Olive oil is known to be heart healthy because it contains monounsturated fatty acids. Researchers wanted to know if the polyphenols in olive oil also contribute to olive oil’s heart-healthy aspects.

Virgin olive oil, which comes from the first pressing of olives, contains higher amounts of polyphenols than refined olive oil, which comes from later pressings.

In a crossover study, 200 healthy young men consumed about one tablespoon of either virgin olive oil, refined olive oil or a mixture of the two types of olive oils each day for three weeks, then switched to another type of olive oil.

When High-Fat May Be Better Than Low

A high-fat diet may be better for you than cutting back on overall fat intake, if it’s the right kind of fat.

That’s the early read of ongoing research, as published in the Annals of Internal Medicine, according to The Early Show medical correspondent Dr. Emily Senay.

She explained to co-anchor Hannah Storm Friday that the study is comparing people who’ve made an effort to reduce their total fat intake with people eating so-called Mediterranean diets. They include large quantities of olive oil and nuts that grow on trees, such as walnuts, hazelnuts and almonds.

Greek Olive Oil Beckons Koreans

The Greek Embassy in Korea hosted the “Greek Olive Oil and Food Festival” at the Millennium Hilton Hotel in Seoul last Monday.

The event was to introduce Greek olive oil boasting a unique taste and quality to Koreans who are not familiar with the small oval fruit.

The olive is one of the common healthy ingredients in Greek dishes. For that reason, a Nobel Prize winning Greek poet Odysseas Elytis said “when Greece is taken apart, you are left with a vineyard, a boat and an olive.”
