If Cerasuola is western Sicily’s firebrand, Biancolilla is its gentle elder. An old island variety named for the pale, lilac-tinged colour of its fruit, it gives a soft, delicate and slightly sweet oil — the mellow voice in many of western Sicily’s blends, and lovely on its own for those who like a lighter touch.

An old Sicilian native

Biancolilla is one of Sicily’s ancient varieties, long established in the west of the island around Agrigento, Trapani and beyond. The name nods to the pale, faintly lilac hue the fruit can take. Alongside Cerasuola and Nocellara del Belice it is one of the three pillars of western Sicilian oil, often appearing in the island’s protected blends where its softness balances the more aggressive varieties. It is well adapted to the hot, dry Sicilian conditions and has been grown there for centuries — a quietly essential part of the island’s olive identity rather than a headline name.

A delicate oil

Where many Sicilian oils shout, Biancolilla speaks softly. Its oil is typically light, delicate and slightly sweet, with gentle fruitiness and only mild bitterness and pepper — an approachable, almost elegant profile. That makes it valuable both on its own, for anyone who finds the big peppery oils too fierce, and as a blending partner that rounds off and balances stronger varieties like Cerasuola. Use it where you want olive-oil flavour without aggression: over fish, delicate vegetables, fresh cheese, or in baking. It is proof that “mild” need not mean “dull” when the oil is fresh and well made.

Buying Biancolilla

Seek a fresh Biancolilla, solo or in a western-Sicilian blend, with a harvest date. Expect a soft, delicate, slightly sweet oil — perfect if peppery oils overwhelm you, or for dishes where you don’t want the oil to dominate. As with all delicate oils, freshness is everything: its gentle character fades fast, so buy young and use it up.
