Extra Virgin vs Virgin vs Pure Olive Oil
Here is the short version: extra virgin is the top grade, virgin is a notch below, and “pure” (usually just labelled “olive oil”) is a refined blend that is the lowest of the three you’ll find on a shop shelf. The whole difference comes down to how the oil was made and how faulty it tastes. Extra virgin and virgin are both pressed from the fruit using only mechanical means, no heat or chemicals. “Pure” or “olive oil” has been refined in a factory to strip out defects, then had a splash of virgin oil stirred back in to give it some colour and flavour. What actually separates the grades
Two things decide the grade of an olive oil: free acidity and a sensory taste test. Free acidity is a lab measurement, expressed as grams of oleic acid per 100 grams of oil, and it tells you how much the fruit had already started to break down before or during pressing. Lower is better. It has nothing to do with the tangy “acidic” taste people imagine, and you cannot judge it by tasting. The sensory side is done by a trained tasting panel that checks for fruitiness and for defects like rancidity, fustiness or a winey off-note.
Extra virgin has to clear both hurdles: very low acidity and zero detectable defects. Virgin allows slightly higher acidity and a whisper of imperfection that a panel can pick up but most of us wouldn’t clock. Anything that fails those bars because it tastes genuinely bad or has high acidity is called lampante (from the old word for lamp oil, since that is roughly what it was once fit for). Lampante is not sold to eat as is. Instead it goes to a refinery, where heat, filtering and neutralising agents strip out everything unpleasant, along with most of the colour, aroma and antioxidants. That refined oil is flavourless, so producers blend in some virgin or extra virgin oil to make it palatable. The result is what you see labelled “pure olive oil” or simply “olive oil”.
The internationally recognised thresholds, set by the International Olive Council and broadly mirrored by EU rules, look roughly like this. Treat the numbers as the accepted maximums rather than typical values, because a good extra virgin is usually well under its ceiling.

Which one should you buy, and does it matter for cooking?
For finishing, dressing and dipping, extra virgin wins every time. That is where its peppery, grassy, sometimes almondy character earns its keep, and where the antioxidants that survive because it was never refined actually reach your plate. A stubborn myth says you can’t cook with extra virgin. You can. A decent extra virgin has a smoke point comfortably above normal pan and roasting temperatures, roughly in the 190 to 200°C range, and its antioxidants actually make it fairly stable. The honest caveat is cost: if you’re deep-frying a big batch or searing at very high heat, you’re paying premium money to cook away the very qualities you paid for. That is exactly the job “pure” olive oil was designed for. Its neutral taste and higher refined smoke point make it a sensible, cheaper everyday cooking oil. A few buying tips that matter more than the grade word on the front:
- Look for a harvest date, not just a best-before. Olive oil is a fruit juice and it fades; fresher is better, ideally within the last year or so.
- Buy dark glass or tin. Light and air are the enemies. A clear bottle on a bright shelf is already tired.
- Don’t over-read the country flag. A grape or olive variety’s name isn’t the same as a single country of origin, and plenty of good oil is blended across regions. Judge it by grade, freshness and taste, not romance.
- Store it cool and dark, lid on, away from the hob. Heat and light undo it fast.

No, and the name is a bit of a tease. “Pure olive oil” is a refined oil blended with a little virgin oil. Despite the word, it is the most processed of the everyday edible grades. Extra virgin is the least processed and the highest quality.
Can I fry with extra virgin olive oil?
Yes. Its smoke point sits roughly around 190 to 200°C, above most home cooking, and it’s reasonably stable. The only real downside is that heat mutes the flavour and aroma you paid extra for, so for heavy frying a cheaper “pure” olive oil makes more sense.
What does the acidity number mean?
