Olive Oil Grades Explained
Olive oil is graded chiefly by how it was made and how much free acidity it carries. At the top sits extra virgin olive oil (EVOO) — pressed from fresh olives by mechanical means alone, with no faults and a free acidity of no more than 0.8%. Below it come virgin, then refined oils that have been chemically cleaned up, and finally pomace oil squeezed from the leftover paste. In short: the fewer the processing steps and the lower the acidity, the higher the grade.
These aren’t marketing words. The grades are laid down by the International Olive Council (IOC) and mirrored in European Union regulation, so a bottle labelled “extra virgin” has to meet real chemical and taste thresholds. Below we walk through each tier, what the numbers mean, and how to read a label without being fooled.
The grades, from top to bottom
Extra virgin olive oil (EVOO). The gold standard. It’s extracted from the fruit purely by crushing, malaxing and centrifuging or pressing — no heat abuse, no solvents. To earn the name it must be free of sensory defects (no rancid, fusty or muddy notes) and show some fruitiness on a trained tasting panel, alongside a free acidity of 0.8% or less. It keeps the polyphenols, aromas and peppery bite that make good oil worth buying.
Virgin olive oil. Made exactly the same mechanical way, but it just misses the top mark — a slightly higher acidity (up to 2%) or a faint fault the panel can detect. Perfectly edible and sold as-is in many producing countries, though you’ll rarely see it on export shelves.
Lampante olive oil. The name comes from lampante, “lamp oil” — historically burned for light. This is virgin oil that’s too flawed or too acidic (above 2%) to sell for eating. It isn’t fit for the table as it stands and must be refined first. It’s a raw material, not a retail product.
Refined olive oil. Lampante or other faulty virgin oil sent through refining — heat, filtration and chemical or physical treatment that strips out the defects, the colour, most of the aroma and much of the polyphenol content. What’s left is a neutral, near-flavourless oil with very low acidity. It’s rarely bottled on its own.
“Olive oil” (a blend). The plain-labelled bottle simply marked olive oil — sometimes “pure” or “light” in some markets — is refined olive oil blended with a splash of virgin or extra virgin to give it back a little flavour and colour. Fine for high-heat frying; not what you want for finishing a salad.
Olive pomace oil. After the paste is pressed, a fair bit of oil still clings to the skins, pulp and stones — the pomace. That residue is treated with solvents to extract the last of the oil, which is then refined and usually blended with a little virgin oil. It’s the lowest edible tier: cheap, stable, neutral, and a world away from EVOO. It should always say “pomace” on the label.
Grades and acidity at a glance
Free acidity — the proportion of loose fatty acids, expressed as oleic acid — is the headline chemical marker. It rises when olives are bruised, stored too long or fermenting before pressing, so a low figure signals healthy fruit handled quickly. It is not a measure of sourness you can taste; it’s a lab number. Here’s how the official tiers line up.

A couple of things worth knowing. Acidity alone doesn’t crown an oil — the tasting panel and other lab checks (like peroxide value and UV absorbance, which flag oxidation) matter just as much. And “cold pressed” or “first cold pressed”, while comforting to see, mostly speaks to temperature during extraction rather than the grade itself; the grade is what’s regulated. Olive oil grades — common questions
Is extra virgin olive oil always the healthiest choice? Generally, yes for everyday use — EVOO keeps the most polyphenols and antioxidants because it isn’t refined, and it’s the oil most studied in Mediterranean-diet research. That said, this is food, not medicine, and we’re not offering medical advice; if you have specific dietary concerns, speak to a professional.
What does free acidity actually tell me? It reflects how sound the olives were and how gently they were handled — lower is better. You can’t taste it directly; it’s measured in a lab. A reputable EVOO will often sit well under the 0.8% ceiling, sometimes around 0.2–0.4%.
Can I fry with extra virgin olive oil? You can, and it’s more heat-stable than many people assume thanks to its antioxidants, but its smoke point is moderate and you’d be “cooking away” the delicate aromas you paid for. For deep-frying, a plain “olive oil” blend or pomace oil does the job at lower cost.
Is olive pomace oil bad or fake? It’s neither fake nor unsafe — it’s a legitimate, regulated grade, just the lowest edible one. It’s solvent-extracted and refined, so it lacks EVOO’s flavour and character. Trouble only arises when it’s passed off as something better, so check that the label plainly says “pomace”.
