Olive Oil Acidity, Explained
Olive oil acidity is a laboratory measurement of free fatty acids, not a taste of sourness on the tongue. It tells you how much the oil’s fat molecules have broken down, and it is one of the clearest signals of how carefully the fruit was grown, picked and pressed. For a bottle to be labelled extra virgin, the free acidity must sit at or below 0.8%, expressed as grams of oleic acid per 100 grams of oil. A lower number generally means fresher, better-handled fruit. Crucially, you cannot taste acidity, and no home taste test will reveal it: it is measured in a lab, not with your palate.
What “acidity” actually means in olive oil
Every olive oil is made of triglycerides: three fatty acids bound to a glycerol backbone, like three strands tied to a single knot. When the fruit is damaged, bruised, left too long in bins, attacked by the olive fly, or milled from over-ripe or fermenting olives, natural enzymes and microbes snip some of those strands loose. The freed strands are called free fatty acids, and in olive oil the dominant one is oleic acid. Measuring “acidity” simply means measuring how many of those loose strands are floating about, reported as a percentage by weight.
So acidity is really a spoilage-and-handling score. High free acidity is the chemical fingerprint of fruit that went wrong somewhere between the branch and the mill. It is not something a miller can add, subtract or fake by adjusting a recipe; it is baked in by the raw material and how quickly and cleanly it was processed. This is why growers obsess over picking healthy fruit and getting it crushed within hours, ideally the same day.
Here is the part that trips almost everyone up: free acidity has nothing to do with how sharp or sour an oil tastes. The peppery sting at the back of your throat and any faint bitterness come from polyphenols, the antioxidant compounds in fresh oil, not from acidity. A robust, throat-catching oil can have very low acidity, while a flat, greasy, defective oil can have high acidity yet taste of nothing much at all. The mouth and the lab are measuring two entirely different things.
Why extra virgin has to be under 0.8%
The 0.8% ceiling is set by the International Olive Council and mirrored in European Union regulation and many national standards. It exists because free acidity is cheap, objective and hard to game, which makes it a reliable gatekeeper for quality grades. Alongside it sits a sensory panel test: to be extra virgin an oil must also be free of tasting defects and show some fruitiness. Acidity alone does not crown an oil extra virgin, but an oil over 0.8% is disqualified outright, no matter how it tastes.

Notice the twist at the bottom. Refined olive oil can show an extremely low acidity, around 0.3% or less, precisely because refining chemically strips the free fatty acids out. So a rock-bottom acidity number on its own does not prove quality; on a defective oil it can simply mean the faults were processed away. Acidity is meaningful as a quality signal specifically for virgin oils, where nothing has been done to hide what the fruit brought in. What good acidity looks like in the real bottle
The legal line is 0.8%, but that is a ceiling, not a target. Genuinely fine extra virgin oils routinely come in far lower, often around 0.1% to 0.4%, and many top producers print the exact figure on the label as a quiet badge of care. A number in that lower band, backed by a recent harvest date, is a good sign the fruit was healthy and swiftly milled. That said, chasing the very lowest number can mislead, since acidity says nothing about flavour, aroma or antioxidant strength. Treat it as one line on a report card, read alongside the harvest date and, ideally, a taste you actually enjoy.
A quick word on the phrase “low acid olive oil” you sometimes see marketed for sensitive stomachs. In olive oil terms, all real extra virgin is already low in acidity, and the tiny fraction of free fatty acids present is far too small to make a bottle feel harsh or “acidic” to eat. Can I taste the acidity of olive oil?
No. Free acidity is invisible and flavourless to the palate, measured only in a lab. What you taste as sharpness, bitterness or a peppery catch comes from polyphenols and freshness, not from free fatty acids.
Is lower acidity always better olive oil?
For virgin oils, lower usually points to fresher, better-handled fruit, which is a good thing. But refined oils are chemically pushed to very low acidity too, so the number alone is not proof of quality. Read it together with the harvest date and grade.
