Turkey: 2,300 years old olive oil factory discovered in Milas

When archaeologists uncover an ancient olive-oil works — as they have at Milas in south-west Turkey — the striking thing is how familiar it looks. The presses, the settling vats, the storage jars: the machinery of oil has barely changed in two thousand years, and that continuity is a story worth telling.

Every few years a dig somewhere around the Mediterranean turns up another ancient olive-oil installation — a cluster of stone press-beds, a scatter of great storage jars, the tell-tale channels cut to run oil into settling tanks. A find at Milas, in the old region of Caria in south-west Turkey, is a good example, dated to roughly two and a half thousand years ago. What makes these discoveries quietly thrilling is not that they are strange, but that they are recognisable: the ancient oil-maker was solving exactly the problems a modern miller solves.

Oil as ancient wealth

To understand why a two-thousand-year-old factory turns up so often, you have to grasp how central olive oil was to the ancient economy. It lit lamps, cleaned and anointed bodies at the baths, fuelled ritual and medicine, and above all it was a tradable, storable form of wealth. Great estates pressed far more than they could eat and shipped the surplus across the sea in standardised clay amphorae — the shipping containers of antiquity. A working oil press was infrastructure, and a rich tomb near one, as at Milas, is no surprise: oil made fortunes.

How ancient oil was actually made

The ancient method and the traditional stone mill are essentially the same machine. Olives were crushed — often under a rolling stone in a basin, the trapetum the Romans refined — then the pulp was pressed, using either a massive lever weighted with stones or a screw press, both of which archaeologists find as cut stone anchors and weights. The liquid ran along channels into settling vats where the oil floated free of the watery lees and was skimmed. It is the very process a preserved mill shows, and its logic survives in today’s mechanical extraction.

What the ruins tell us

These sites are more than curiosities; they are evidence. The number and size of presses reveal how much oil a region produced and whether it was for local use or export. Amphora stamps trace trade routes across the whole sea. The placement of vats and channels shows a sophisticated grasp of the one principle that still governs oil-making: that oil and water separate, and time and gravity will do half your work. Standing over a 2,300-year-old press-bed, you are looking at the direct ancestor of the stainless-steel plant that filled your last bottle — the same idea, patiently improved.
