Why Sensory Panels Still Beat Machines

To be graded extra virgin, an oil has to pass a lab — and a tasting. The second gate is a panel of trained human tasters, and despite all our technology, they remain the law. Here is why the most advanced tool in olive-oil grading is still a person.

Chemistry tests — free acidity, peroxide value, the UV K-values — prove an oil was well made and fresh. But they cannot taste a defect. A trained sensory panel detects the faults that disqualify an oil — rancid, fusty, musty, winey — and confirms a positive fruitiness. An oil can be chemically perfect and still fail here on flavour. What only a panel can catch

The official method puts a group of calibrated tasters — typically eight to twelve — around a set of blue glasses that hide the oil’s colour, so no one is swayed by looks. Each scores the intensity of defects and of positive fruitiness on a standard sheet, and the panel leader takes the median. For extra virgin the defect median must be zero and fruitiness above zero. A single off-note the chemistry missed — a whiff of the muddy, the winey, the stale — is enough to push an oil down a grade, no matter how clean its numbers.
