The brown crust on a roast potato, the gold on a seared cutlet — that is the Maillard reaction, sugars and amino acids rearranging into hundreds of flavour compounds. Oil is the medium that carries the heat evenly to the food. Here is how it works, and where olive oil fits.

The Maillard reaction is a cascade between amino acids and reducing sugars, kicking off meaningfully from around 140–165°C and building the savoury, toasted, complex flavours we read as ‘cooked’. It needs heat and a reasonably dry surface — water boils off at 100°C, so a wet food steams rather than browns until the surface dries. Oil’s job is to bridge the pan and the food, spreading heat into every dimple of the surface so browning is even rather than patchy.

What the reaction actually is

This is distinct from caramelisation, which is sugars browning alone. Both can run at once, but Maillard is the one doing most of the heavy lifting on meat, bread and vegetables. It is the source of the crust, the toast, the roast — hundreds of new aroma compounds that raw ingredients simply do not have. The oil does not cause the reaction; heat and a dry surface do. What the oil does is deliver that heat evenly and quickly, which is why a filmed pan browns better than a dry one.

Where olive oil fits

A common myth says olive oil cannot take the heat. In practice a decent extra virgin smokes somewhere around 190–210°C, comfortably above normal sautéing and roasting, and its antioxidants give it real stability in the pan. You will lose some of the delicate raw aromas to the heat — that is unavoidable — so there is a sensible split: cook with a sound everyday oil, then finish the plate with a drop of your best raw. For deep-frying at sustained high heat, a refined oil is the economical workhorse. For the browning that builds flavour, olive oil does the job well.
