How Table Olives Are Processed
Every table olive you eat has been cured, because a fresh olive straight off the tree is bitter to the point of being inedible thanks to a compound called oleuropein. Processing is simply the craft of coaxing that bitterness out. The three great traditions do it in different ways: the Spanish style uses a lye soak followed by a lactic ferment for green olives, the Greek style leans on time and salt (brine or dry salt) with little or no lye, and the Californian style uses lye plus air to turn olives a uniform black. Understand those three routes and you understand nearly every olive on the shelf.
Why raw olives must be cured at all
Bite a raw olive and you will spit it straight out. The flesh is loaded with oleuropein, a phenolic glucoside so astringent that it puts off almost every animal that might otherwise strip a tree. Curing breaks oleuropein down or leaches it away, and along the way it seasons and preserves the fruit. There are really only a handful of tools to do this job: lye (a dilute alkaline solution, usually sodium hydroxide) which chemically splits the bitter compound fast; brine or water, which slowly dissolves it out; dry salt, which draws moisture and bitterness out together; and time, often with fermentation by naturally present lactic-acid bacteria and yeasts. Each regional style is just a different recipe built from those same few tools.
Ripeness matters as much as method. Olives picked young and green behave differently from the same fruit left to turn purple or fully black on the tree, so the harvest date is really the first processing decision. The three main styles, side by side
Spanish style (Sevillian green olives). Firm green olives are first soaked in a dilute lye solution that penetrates part-way into the flesh and neutralises the bitterness. The lye is then washed out with several changes of water, and the olives go into brine, where wild Lactobacillus bacteria ferment the natural sugars into lactic acid over weeks to months. That ferment is what gives a good Spanish olive its clean, slightly tangy, savoury bite. Manzanilla and Gordal olives are the classic examples, though the style is used worldwide.
Greek style (naturally fermented). The most traditional Greek approach skips lye altogether. Ripe olives, often black or purple, are placed directly in brine and left to ferment slowly, sometimes for six months or more, while the bitterness leaches out into the liquid. The result keeps more of the olive’s natural fruitiness and a pleasant, mildly bitter edge. Kalamata olives are usually made this way (often slit or scored to speed the cure), while some regions use a dry-salt cure, packing very ripe olives in coarse salt until they shrivel into the wrinkled, intense “oil-cured” style. Remember that a name like Kalamata refers to a variety and a method, not a guarantee of a single country of origin.
Californian style (oxidised black “ripe” olives). These are the uniform, matte-black olives from a tin. Green or part-ripe olives are held in brine, then treated with repeated lye soaks while air is bubbled through the liquid. The oxygen reacts with phenols in the flesh to darken it, and a touch of ferrous gluconate is usually added to fix that even black colour. Unlike the other two styles there is little or no fermentation, so the flavour is mild and the texture soft. Because the process is quick and the flavour gentle, these are the everyday pizza-and-salad olives.

The timings above are broad ranges, not hard rules — every producer, variety and batch differs, and a slow natural ferment can run far longer than the figures suggest. What stays constant is the underlying logic: get the bitterness out, then preserve and season the fruit. A note on salt and health
Whichever way they are cured, table olives finish life in salt, so they are a genuinely salty food — worth keeping in mind if you watch your sodium intake. How table olives are processed: common questions
Can you eat olives straight off the tree? No. Raw olives are intensely bitter because of oleuropein and need curing before they are palatable. A quick nibble won’t harm you, but you certainly won’t enjoy it.
Is lye in olives dangerous? Not in the finished product. Lye is used only during curing and is then thoroughly washed out; properly processed olives contain no active lye. It is the same food-grade principle used in making pretzels and some traditional breads.
Why are canned black olives so uniform in colour? Because they are Californian-style “ripe” olives, darkened by oxidation with air and a colour-fixing agent (ferrous gluconate) rather than by ripening on the tree. That is why they look identical and taste mild.
What’s the difference between green and black olives? Mostly ripeness and processing, not species. Green olives are picked earlier and firmer; black olives are either riper or have been oxidised during curing. The same tree can yield both.
