Olive Wood: Why the Tree’s Timber Is So Prized

Olive-wood bowls, boards and spoons turn up in every Mediterranean market, and they are not merely souvenirs. Olive is genuinely one of the finest hardwoods there is — and where it comes from is more interesting than most buyers realise.

The olive gives its fruit, its oil and — eventually — its wood, and the wood is extraordinary. Dense, swirling-grained, honey and amber with dark streaks running through it, hard enough to blunt a chisel and tough enough to outlive the person who bought it. It is one of the few kitchen materials that genuinely improves with use.

What makes olive wood different

Olive is very dense and very hard, with a fine, tight grain that takes a glassy polish. Density is the source of nearly all its virtues: it resists water and staining, it does not absorb odours the way open-grained timbers do, it is gentle on knife edges, and it does not splinter. It is also naturally food-safe and faintly aromatic, which is why it is used for boards, bowls, spoons and serving ware rather than for furniture.

The dramatic figure — those swirling dark streaks that make no two pieces alike — comes from the tree’s growth habit. An olive does not grow straight. It twists, forks, hollows itself out over centuries, sends up new growth from the base and lays down irregular rings in response to drought and pruning. All of that turbulence is recorded in the grain. A perfectly straight, evenly figured piece of olive wood would be a suspicious thing.

The trade-off is that olive is difficult to work and wasteful to convert. Trunks are short, twisted and often hollow; a large piece of clean olive wood is genuinely scarce, which is why a big olive-wood board costs several times what an equivalent beech one does. Small items — spoons, bowls, handles — are what the material naturally yields.

Where it actually comes from

This is the question thoughtful buyers ask, and the answer is reassuring. Because olive trees are grown for fruit and live for centuries, almost no tree is felled for timber. Olive wood comes overwhelmingly from trees that had stopped producing: very old or diseased specimens, groves cleared for replanting, storm damage, and — most of all — the enormous quantity of heavy prunings that every grove generates each year. An olive tree is pruned hard and often, and thick limbs come out of a mature grove routinely.

So a good olive-wood piece is genuinely a by-product of the fruit crop rather than a reason for cutting a tree down. Its slow growth is also exactly why the grain is so dense and figured: the wood in your hand may represent a century of very slow accumulation.

One caveat worth stating plainly. Old olive trees are also dug up and sold whole as ornamental landscape specimens, an established trade that has, in places, put pressure on ancient groves. That is a different market from wood turning, but if you care about provenance, it is worth knowing which one your seller is in.

Looking after it — with olive oil, naturally

Olive wood is durable but not indestructible, and the care is genuinely simple. The enemies are heat, prolonged soaking and dry air.

  • Never put it in the dishwasher. The combination of sustained heat, detergent and saturation will crack it, and the crack will follow the grain.
  • Do not leave it soaking. Wash by hand in warm water, quickly, and dry it immediately.
  • Dry it standing up or on edge so both faces dry evenly. A board dried flat on a wet counter will cup.
  • Oil it periodically. Rub in a little olive oil or a food-safe mineral oil, leave it an hour, wipe off the excess. Once a month for something in regular use.
  • Keep it away from radiators and direct sun. Dry heat is what splits a board that survived years of washing.
  • Stubborn smells — garlic, onion, fish — come out with coarse salt and half a lemon, scrubbed and rinsed.

Treated this way, an olive-wood board darkens slowly, deepens in colour and lasts decades. Neglected, it cracks within a year. It is one of the very few objects in a kitchen where the maintenance is the difference between an heirloom and a disappointment.

The thing worth knowing when you are standing at a market stall is that olive-wood prices vary wildly for good reasons. A cheap board is usually laminated — several small strips glued together — because a genuine single-piece olive board of any size is a rare thing. Laminated is not fraud and it can be perfectly serviceable, but the glue lines are where it will eventually fail, and no amount of oiling saves it. Turn the piece over and look at the edge. One continuous grain wrapping around the edge means one piece of wood, and it is worth the difference in price several times over.
