Greece, Olive Museum in Kavala
At Elaiochori, west of Kavala in northern Greece, an old oil mill has been restored as a museum of the olive. The dates on its plaque tell a bigger story than the building does — and it is the story of how olive oil stopped being a village affair.

Eastern Macedonia is not the Greece of the olive postcards. That is Crete, the Peloponnese, Lesvos. But olives grow here too, along the coast west of Kavala, and until quite recently every village of any size had its own mill.
The one at Elaiochori began operating in 1950 and shaped the local economy for two decades — then stopped in 1970 and stood empty. Restored with European structural funding and opened to the public in 2008, it now houses an olive and oil museum across a site of some three thousand square metres, with the original mill and its machinery intact alongside exhibition space, an event hall and an open-air theatre.
It is a good museum. But the two dates that matter are 1950 and 1970, and what happened between them happened everywhere.
The village mill was never only a mill
To understand why a defunct oil press deserves a museum, you have to understand what it did besides pressing olives. In an olive village the mill was the seasonal centre of everything. Growers brought their fruit and waited, sometimes for days, and while they waited they talked prices, weather, marriages and land. The mill kept the records of who brought what, which made it the closest thing the village had to an accountant. It often extended credit against the coming crop, which made it the closest thing to a bank.
It also enforced a particular economy: because milling happened locally and immediately, most families ate their own oil, identifiable by grove and by year. The idea that olive oil is a branded product bought in a shop is, historically speaking, very new.
What happened in 1970
Mills like this one did not close because olives stopped growing. They closed because the technology changed underneath them, and the change was decisive.
The traditional process crushed fruit under stones, spread the paste on fibre mats stacked into a column, and squeezed the column in a press. It was slow, labour-heavy, and the mats were an ongoing hygiene problem — they retained old paste and could taint every batch that followed. From the late 1960s the continuous centrifugal decanter spread rapidly through the Mediterranean: crush, malax, and separate the oil by spinning, in one uninterrupted flow, with no mats and a fraction of the labour.
A modern plant could do the work of dozens of village presses. Fruit began travelling to a central mill instead of a local one, and the small presses stopped one after another across Greece, Italy, Spain, France and the Levant, mostly within a single decade. That is the wave that stranded the Elaiochori mill in 1970 — and it is why so many restored olive museums date their silence to almost exactly the same years.

What is worth seeing, and what to ask
An olive museum in a genuine old mill is worth an hour of anyone’s holiday, but the interesting questions are not the ones the panels answer. Ask which press generation the machinery belongs to — beam, screw, hydraulic — because that dates the building better than any plaque. Ask where the fruit came from and how far people walked with it. Ask what happened to the pomace, the spent paste, which was fuel, fertiliser and animal feed long before it was solvent-extracted into pomace oil.
- Look for the mats if the mill is hydraulic-era: round fibre discs, stacked with paste between them. They are the single most evocative object in any old mill.
- Find the water channel. Old mills were sited for water, and the layout of the building usually follows it.
- Ask about the co-operative. Most surviving Greek mills are co-operative, and that structure is why small growers still have an outlet.
- Do not expect the oil to be historic. Museum shops sell modern oil, which is a good thing — old milling methods made worse oil, not better.
- Visit in late autumn if you want to see a working mill nearby rather than a preserved one.

The centrifuge did not just save labour, it removed the single largest source of defect in the whole process. Keep the museums. Do not wish the method back.
