Ask most people how olive oil is made and they picture something industrial and mysterious. It is neither. Olive oil is simply the juice of a fruit, squeezed out and separated from its water. The whole craft lies in doing that gently, quickly and cleanly — because an olive starts to spoil the moment it leaves the tree, and every hour and every degree of heat between branch and bottle costs you flavour and quality. A good mill is really just a machine for losing as little as possible.
Step one: pick, and pick fast
It begins in the grove. Olives are harvested — by hand, by rake, or by machines that shake the tree — and the clock immediately starts ticking. Fruit left sitting in bags or bins begins to ferment and heat up, and that taint carries straight into the oil. The best producers get their olives to the mill within hours, not days. This single fact, more than any cultivar or region, separates a fresh, lively oil from a flat, faintly musty one. If you remember one thing about how good oil is made, make it this: speed.
Step two: crush to a paste
At the mill the whole olives — flesh, skin and stone together — are crushed into a paste. For centuries this was done with the great granite wheels you still see in old mills, turning slowly in a stone basin. Most modern mills now use stainless-steel hammer or disc crushers, which are faster, cooler and more hygienic, though a few traditionalists keep the stones. Either way the goal is the same: rupture the fruit cells so the tiny droplets of oil trapped inside can begin to come together.
Step three: malaxation — the step nobody names
Here is the quiet heart of oil-making, and the step no marketing label ever mentions. The paste is slowly churned — malaxed — for anything from twenty minutes to an hour, so the microscopic oil droplets merge into larger ones that can actually be separated out. Do it too briefly and you leave oil behind in the paste; do it too long or too warm and you oxidise the oil and lose the fresh, green aromatics. This is where a skilled miller earns their keep, and where the meaningless phrase cold-pressed actually means something: keep the paste cool (traditionally under about 27 °C) and you protect the flavour and the antioxidants.
Step four: separate the oil from the water
Finally the oil is drawn off. Traditional mills spread the paste on fibre mats, stacked them and pressed — the origin of first press. Almost every serious mill today instead uses a horizontal centrifuge (a decanter) that spins the paste and flings oil, water and solids apart by weight, then a second vertical centrifuge to polish the oil. It is faster, cleaner and gives a better, more consistent oil than the old mats ever could. The result runs out cloudy and green — raw olive juice — and that is your extra virgin, if the fruit was sound and nothing was heated or refined.

What the label words really mean
- Extra virgin — oil from sound fruit, made only by mechanical means, no heat or chemicals, and free of tasting faults. The one term that counts.
- Cold-pressed / cold-extracted — the paste was kept cool during malaxation. Meaningful, but implied by any decent extra virgin.
- First press — a leftover from the old mat-press days. With modern centrifuges there is only one extraction, so it means little now.
- Refined / ‘pure’ / ‘light’ olive oil — oil that was faulty and then chemically cleaned up. Not the same thing at all.
