Water: the first pressure
Traditional olives survived on rainfall. The new intensive plantations depend on irrigation — and in southern Spain, Greece, Italy and Portugal, water is exactly what is running short. Spain, the world’s largest producer, is also the European country most exposed to desertification: by United Nations estimates around three-quarters of its territory is at some risk. When a hot, dry country expands irrigated planting to push production higher, it draws down aquifers and rivers that are already stretched — sometimes tapping groundwater that took millennia to accumulate. A drip line makes the desert bloom on paper while masking a deepening water imbalance underneath.
Soil erosion: the quieter catastrophe
Ask agronomists what the single worst environmental problem of olive farming is and most will not say water — they will say soil. Olives are often grown on slopes, and the common practice of keeping the ground bare between trees leaves that soil naked to winter rain, which strips it away faster than it can ever reform. On mechanically reshaped, steep intensive plots the loss can be severe, and lost topsoil does not come back in a human lifetime. The economics are brutal. When super-high-density plantations can harvest a kilo of olives for a few cents, the old terraced groves that shaped Mediterranean landscapes for centuries simply cannot compete.
