Olive oil’s green tint comes from chlorophyll, and chlorophyll does not last. As the oil ages — and far faster if it has been heated — the pigment falls apart into a family of colourless breakdown products. The clock has one important quirk: heat speeds it up dramatically. The same breakdown that takes a year at room temperature can happen far faster in a warm warehouse or, above all, during industrial refining, where high temperatures are part of the process. That is what makes the test doubly valuable. A high pyropheophytin figure in an oil sold as fresh extra virgin says either that the oil is old, that it was stored hot, or that it has been refined — perhaps a refined oil quietly blended into a virgin one. Some quality standards set a ceiling, commonly around seventeen per cent, to draw the line.

Why colour alone will fool you

Here is the trap this test springs. People instinctively judge oil by its green, but colour is a poor guide — producers can blend for it, bottles hide it, and tasting glasses are deliberately coloured to stop it swaying a panel. Pyropheophytin looks past the colour to the pigment’s actual state of decay. An oil can still look faintly green and yet carry a high pyropheophytin figure that betrays age or heat.
