Amphorae: How the Ancients Shipped Oil

Long before glass bottles or steel tankers, olive oil moved across the Mediterranean inside fired clay jars called amphorae. They were the shipping containers of antiquity — standardised, stackable, and disposable — and the heaps of broken ones left behind still let us trace exactly where ancient oil came from and went.

The amphora is the unsung hero of the ancient olive trade. It was the standard container that let oil travel by sea — cheap, mass-produced, stackable, and often thrown away at journey’s end. Because they were made in the millions and discarded after use, amphorae left behind mountains of broken pottery, and that rubbish is one of the best maps we have of who shipped oil, from where, to whom. To read an amphora is to read a shipping label two thousand years old.

The shipping container of antiquity

An amphora is a two-handled clay vessel with a narrow neck and a pointed or knobbed base, made by the million to carry oil, wine and other goods by sea. The shape was purely practical: the handles gave a firm grip, the narrow mouth could be sealed against air, and the pointed base let jars be packed upright in tight, interlocking rows in a ship’s hold or roped together for handling. Different regions made recognisably different amphorae, which acted almost like branding — a buyer could read the origin from the jar’s shape and clay. They were often a one-way package, cheap enough to break open at the destination rather than ship back empty.

What the shards still tell us

Because amphorae were used once and discarded, the ancient world left enormous quantities of broken pottery behind — whole hills of it in places. To archaeologists this is a gift. By matching an amphora’s shape and clay to its production region, and reading stamps or painted notes on the surface, researchers can reconstruct who was exporting oil, to where and roughly when. Rome’s famous Monte Testaccio is essentially a mountain of smashed oil amphorae — an estimated fifty-odd million of them, mostly the big Dressel 20 jars of southern Spain — a record of the capital’s vast appetite for imported oil written in fragments.

Why the jars were thrown away

Here is the detail that turns a rubbish heap into understanding. Wine amphorae could be rinsed and refilled, but oil jars could not: the porous clay soaked up oil and turned rancid, tainting whatever came next. So Rome had no choice but to smash and stack its empties, dusting the layers with lime against the stink. Monte Testaccio — a 35-metre hill built entirely of single-use oil packaging — is therefore the clearest fingerprint of mass consumption the ancient world left. The next time a wine bottle feels wasteful, remember that Rome generated a literal mountain of one-way containers, and left it standing for two thousand years.
