What tocopherols actually do
Fat goes rancid when oxygen attacks its fatty acids and sets off a chain reaction — one damaged molecule wrecks the next, and the spoilage spreads. Tocopherols step into that chain and stop it: they hand a hydrogen atom to the unstable molecule so the damage cannot propagate. Alpha-tocopherol is the dominant form in olive oil, making up the large majority of the total, and a well-made extra virgin typically carries somewhere in the region of one to three hundred milligrams per kilogram, sometimes more. That reserve is a real part of why a sound oil holds its freshness for a year or more while a stripped, tired oil goes flat in months. Crucially, the tocopherols are not added at the mill — they come from the fruit itself, which is one more reason gentle handling matters. Heat and rough treatment burn through them long before the bottle is filled.
Why they fade
Tocopherols are sacrificial. Every time the oil meets oxygen, light or heat, a few of them are spent in its defence, and nothing replaces them. A bottle left near a stove or on a windowsill loses them fastest — ultraviolet light is brutal on this whole family, which is exactly why clear glass on a bright shelf is such a quiet disaster. The polyphenols, the oil’s other great antioxidants, actually shield the tocopherols by spending themselves first, so the two work as a team with a running order. When both are exhausted, oxidation runs unchecked and you taste the result: crayon, putty, old walnuts, wet cardboard. This is the honest reason dark glass and a cool cupboard matter. You are not fussing over a luxury; you are protecting a finite chemical reserve the tree handed you, one that cannot be topped up.

What the number does not tell you
Producers occasionally quote a vitamin E figure on the label, and it looks reassuring. Treat it gently. A high tocopherol reading at bottling says the fruit and the milling were decent; it says nothing about what has happened since. Light and warmth spend those molecules invisibly, so a bottle can leave the mill rich and reach your shelf half-empty of its own defences with the printed number unchanged. The figure is a snapshot at birth, not a live reading. Freshness, storage and a recent harvest date tell you far more about how much protection is actually left than any milligram count on the front of the bottle.
Protecting the reserve at home
- Buy oil in dark glass or tin, never a pretty clear bottle that has sat under shop lights.
- Keep it in a cool, dark cupboard, well away from the hob and the window.
- Keep the cap on tight between uses — every open bottle trades air for tocopherols.
- Do not decant good oil into a glass cruet on the counter; you are burning through its bodyguards for the sake of looks.
- Buy a size you will finish in a couple of months once opened; the protection only lasts so long.
