Caramelised onion, olive and goats cheese tart

Ingredients (serves 4)

  • 2 tablespoons olive oil
  • 4 brown onions, sliced
  • 1 tablespoon brown sugar
  • 2 teaspoons red wine vinegar+
  • salt and cracked black pepper
  • 1/2 cup kalamata olives
  • 100g goats cheese, sliced into rounds
  • 1 teaspoon lemon thyme leaves
  • 1 block frozen puff pastry, thawed


  1. Preheat oven to 210°C. Heat the oil in a large frying pan over a medium-high heat.
  2. Add the onions and cook for 10 minutes or until they soften.
  3. Add the brown sugar, vinegar, salt and pepper and continue cooking for another five minutes.
  4. Remove from the heat and allow to cool slightly.
  5. Roll out the puff pastry to a rough 20cm x 30cm rectangle, about 5mm in thickness.
  6. Scatter onions over the pastry, leaving a 3cm border.
  7. Top the onions with the olives and the goats cheese.
  8. Bake for 30 minutes or until the pastry is crisp and puffed.
  9. Scatter with thyme and serve the tart warm.

Notes & tips:
They sound exotic but caramelised onions are so easy to make. Just remember onions reduce significantly when cooked. All the ingredients for this savoury tart are easy to find. Store bought puff pastry saves a lot of time and effort but still needs about half an hour’s baking time in the oven. It will be worth the wait.
