Every olive wears a coat. That dull, slightly greasy bloom on the fruit before it is washed is a cuticular wax the tree builds to hold water in and fungi out, and it is chemically busy stuff. Two pentacyclic triterpenes dominate it: oleanolic acid and maslinic acid. Neither has much to do with flavour, and until the late 1990s almost nobody outside plant chemistry cared about them. Then laboratories in Andalusia, sitting on mountains of olive processing residue, started asking what was in the waste — and maslinic acid began appearing in headlines that promised rather more than the data behind them.

What maslinic acid actually is

It is a naturally occurring pentacyclic triterpene, a rigid five-ring molecule, present in the skin wax and leaves of Olea europaea and in a scattering of other plants. In an olive it is a defensive compound — a phytoalexin, in the jargon — not a nutrient. It is barely soluble in water, which matters enormously for anyone hoping to swallow it and have it do something. The largest practical reserves of it are not in the fruit you eat but in the residue left after oil extraction: pomace, or alpeorujo, the sludgy mix of skin, pulp, crushed stone and vegetation water that an olive mill produces in vastly greater quantity than oil. That is the whole commercial logic of the field. A mill’s biggest problem is what to do with its waste, and any compound that turns waste into a saleable extract is worth a research budget.

What the laboratory has shown

The published work is genuinely interesting and almost entirely preclinical. In cell culture, maslinic acid slows the proliferation of several cancer cell lines — colon cell lines have been studied most — and pushes those cells towards apoptosis, the orderly self-destruct programme that tumour cells characteristically evade. It also shows anti-inflammatory and antioxidant activity in the same kinds of assays, and animal studies have reported effects on inflammation, glucose handling and muscle metabolism. That is a respectable body of evidence for a plant compound, and it explains why the interest has not faded.

What it is not is evidence that eating olives prevents or treats cancer. A dish in an incubator is not a person. Compounds that look formidable against cells in a well have a long, sobering record of doing nothing measurable in a human body, most often because they never reach the tissue in question at a meaningful concentration. Maslinic acid’s bioavailability in humans remains poorly characterised, and the human trials that exist are few, small, and aimed at things like joint discomfort rather than tumours.

Why the headlines keep coming back

Three things guarantee this story returns every few years. Olive-producing regions fund a great deal of olive research, and a positive finding is good regional news. Waste valorisation is real money, so extraction plants and patents follow the papers. And cancer prevention is the single most reliable way to get a plant compound into a newspaper. None of that makes the science dishonest — the laboratory work is real — but it does mean the gap between this molecule inhibits a colon cancer cell line and olives prevent cancer gets closed by headline writers rather than by researchers.

The sensible position is unglamorous. Olives and good olive oil belong in a diet that appears, on population-level evidence, to be a healthy one. That case rests on the whole pattern of eating — the fat profile, the vegetables, the pulses, what is being displaced — not on any single wonder molecule. Anyone selling you a supplement on the strength of an in vitro result is selling you the gap.

  • Table olives and unfiltered oil carry trace amounts of these triterpenes; brining and refining strip most of them.
  • Olive leaf and pomace extracts are far richer than anything you eat — which is why supplements come from the waste stream, not the fruit.
  • A cloudy, unfiltered oil carries more suspended skin and pulp material, and therefore more of this chemistry, but it also keeps less well.
  • Treat any product promising a therapeutic dose of an olive triterpene with the scepticism you would apply to any supplement claim.
