You meet them on labels and mill tours and they sound like jargon: ‘cold pressed’ and ‘malaxation.’ In fact they describe the two moments that decide how good an oil will be. Learn what each really means and a bottle stops being a mystery.

Two terms carry most of the mystique around how oil is made, and both are simpler than they sound. ‘Cold pressed’ (or, more accurately today, ‘cold extracted’) is about temperature. Malaxation is about a slow stir. Between them they explain a genuine tension at the heart of milling: the choices that give you more oil are usually the same ones that give you less flavour. A good miller is constantly trading yield against quality, and these two words are where that trade-off lives.
What ‘cold’ actually means
Cold pressed / cold extracted means the oil was separated without added heat — in the EU, kept below about 27 °C. Warming the paste is tempting because heat loosens more oil out of it, raising yield and therefore profit. But that same heat drives off the delicate volatile aromas and degrades some of the polyphenols — the compounds behind both an oil’s peppery kick and much of its shelf life. So ‘cold’ is a quality promise with a real cost attached: less oil per batch, in exchange for keeping the flavour and goodness intact. For modern mills, ‘extraction’ by centrifuge is the accurate word; ‘pressing’ describes the older method.
What malaxation is
Malaxation is the slow stirring of the crushed olive paste before separation — a gentle, continuous kneading that lets the microscopic oil droplets scattered through the paste merge into larger ones big enough to be spun or pressed out. Without it, much of the oil stays locked in the paste and is lost. But it is a balancing act. Stir longer, or a touch warmer, and you free up more oil — at the cost of exposing it to more air and time, which dulls aroma and invites oxidation. Stir too briefly and cool and you protect the flavour but leave oil behind. The miller’s skill is finding the sweet spot for that day’s fruit.
Why the two words matter to you
Together, cold extraction and careful malaxation are the difference between an oil that tastes alive and one that tastes flat. The producers who chase maximum yield — warmer, longer, faster — get more litres of duller oil. The ones who hold temperature down and keep malaxation short and cool sacrifice some volume for an oil with real aroma, pepper and staying power. When a label bothers to say ‘cold extracted’ and the oil is peppery and fresh, that is usually a producer who chose flavour over yield. That choice is what you are really tasting.

Reading a bottle with this in mind
- ‘Cold extracted’ / ‘cold pressed’ is a meaningful signal — but back it up with a fresh harvest date.
- Peppery, throat-catching oil usually means polyphenols were preserved — a good sign.
- Flat, greasy, odourless oil often means heat or over-long processing somewhere upstream.
- Estate or mill-bottled oils are more likely to have controlled these steps than anonymous blends.

So when you find a genuinely peppery, aromatic oil at an honest price, respect it: someone chose quality over quantity to make it. And distrust a suspiciously cheap oil shouting ‘cold pressed’ on the front — the phrase is easy to print; the restraint behind it is not.
