What a Gas Chromatograph Sees in Your Oil

To the eye, two oils can look identical. To a gas chromatograph they are as different as two faces. The instrument separates an oil into its component molecules and lays them out as a chart of peaks — a fingerprint that can confirm honesty or expose fraud. Here is what it actually measures.

Gas chromatography works by vaporising a tiny sample and pushing it through a long, coated column. Different molecules travel at different speeds, so they emerge one after another, each registering as a peak on a graph. For olive oil the key reading is the fatty-acid profile: genuine olive oil is dominated by oleic acid, and that signature is hard to fake. Cheaper seed oils — sunflower, soybean, rapeseed — carry different fatty acids in different proportions, so cutting olive oil with them shifts the peaks in ways a chemist can spot at a glance.

The fingerprint in numbers

Olive oil sits inside well-defined ranges. Oleic acid, the healthy monounsaturate, runs high; the polyunsaturated linoleic acid stays moderate; and linolenic acid must stay below one percent. Blend in sunflower oil, which is loaded with linoleic acid, and the linoleic peak swells past the olive range. Add rapeseed and you see erucic acid and a linolenic figure that olive oil never reaches. The chromatograph does not need to guess the fraud; it just measures the ratios and lets the numbers fall outside the legal window.

What it catches, what it misses

Chromatography is excellent at detecting adulteration with other vegetable oils and at flagging chemical refining. Paired with related methods it can measure sterols, waxes and free fatty acids that betray a low-grade or deodorised oil sold as extra virgin. What it cannot do is taste: a chemically clean oil can still be flavourless or faintly rancid to a trained panel.
