Watch an olive over autumn and it shifts from hard green to purple to soft black. That colour change, which growers call veraison, is the visible edge of a chemical drama inside the fruit. When a grower picks decides almost everything about the oil: how green or mellow, how bitter, how much. The science is worth knowing because it is really the science of flavour.

A ripening olive is not just changing colour — it is trading one set of qualities for another, week by week, on the branch. Early, it is a hard green pellet crammed with bitter, pungent phenols and relatively little oil. Late, it is soft and dark, fuller of oil but milder, sweeter and far less stable. There is no single ripe moment that is simply correct; there is only the style a maker wants and the trade-off they accept. Taste a fierce early-harvest oil beside a soft late one and you are tasting two different days on the same tree.
What changes inside the fruit
As an olive ripens, its skin pigments shift from green chlorophyll toward the dark anthocyanins that give black olives their colour — the visible sign that veraison has begun. Inside, the fruit is busy. Oil content climbs and then plateaus, typically reaching somewhere around a fifth to a quarter of the fruit’s weight at full ripeness. Water content shifts. And the sharp, bitter phenolic compounds — oleuropein chief among them — gradually decline. A green olive is high in those bitter, pungent phenols; a fully black one is softer, sweeter and lower in the very compounds that make fresh oil taste alive and keep it stable on the shelf. The fruit is, in effect, trading bite for mellowness as the weeks pass.
Why timing is everything
This is why harvest date is a real decision, not a formality. Pick early, while the fruit is green and phenol-rich, and you get a lower yield of intensely green, bitter, peppery oil that keeps well and is loaded with the antioxidants that make good extra virgin worth drinking. Wait for black-ripe fruit and you get more oil per kilo, but milder, rounder, less stable — and more vulnerable to the olive fruit fly and to bruising on the tree. Early harvest costs the grower yield and buys intensity; late harvest buys volume and spends character. The price of a fierce green oil is partly the fruit the grower chose to leave unripe.
The label trick to watch for
Because ‘early harvest’ now sells, the phrase turns up on bottles that do not earn it. Genuine early-harvest oil is green, grassy, bitter and pungent — it should catch at the back of your throat and even make you cough a little. That peppery catch is phenols, the same compounds that fade as the fruit blackens. If a bottle boasts ‘early harvest’ yet tastes flat and sweet, be sceptical: either it was not picked green, or it is tired. Here, bite is a feature, not a flaw.
