Table Olives: Production and Processing
No other fruit reaches the table only after weeks or months of deliberate chemistry. Understanding the four main ways olives are cured explains almost everything about how they taste, what they cost, and why some are worth eating.
Pick an olive off a tree and bite it and you will not do it twice. It is savagely, mouth-drying bitter, because of a phenolic compound called oleuropein that pervades the flesh. Every table olive in the world exists because somebody found a way to remove or transform that compound without destroying the fruit. There are essentially four ways to do it, they have been refined over thousands of years, and the choice between them decides everything you taste.
The four curing methods
The Spanish method (green olives, lye-treated then fermented). Unripe green olives are steeped in a dilute alkaline solution — lye — which penetrates the flesh and breaks down the oleuropein in hours rather than months. The olives are then washed thoroughly and moved to brine, where a lactic fermentation develops over weeks and builds the sharp, savoury, slightly tangy character of a Spanish-style green olive. This is the process behind most Manzanilla and Gordal olives.
The Greek method (natural fermentation, no lye). Ripe or semi-ripe olives go straight into brine and stay there for months while fermentation and slow diffusion draw the bitterness out. It is far slower, it is unforgiving of poor hygiene, and it retains far more of the fruit’s phenolic compounds — which is why naturally fermented olives keep a pleasant bitter edge and a much deeper, more complex flavour. Kalamata and most naturally cured black olives come this way.
The Californian method (oxidation). Green, unripe olives are lye-treated in repeated cycles while air is bubbled through, oxidising the flesh to a uniform black. An iron salt is used to fix the colour. The result is the perfectly round, jet-black, mild pitted olive of the pizza tin: shelf-stable, cheap, consistent, and largely stripped of both bitterness and character.
Dry salt curing. Ripe black olives are packed in layers of coarse salt, which draws out water and bitterness together over several weeks. The fruit shrivels, concentrates and turns leathery and intense. These are the wrinkled black olives of Morocco, Greece and southern France — the saltiest and the most powerful in flavour.

What happens after curing
Curing is only half the production chain. After it come the operations that decide how the olive looks in the jar and how long it lasts.
Sorting and grading by size is done mechanically, and size categories drive price far more than quality does. A large olive of an ordinary variety will often cost more than a small olive of a superb one.
Pitting and stuffing mechanises quickly, and both cost something. A pitted olive loses brine into the cavity and softens faster than a whole one; a stuffed olive is usually a pitted olive plus a paste. If you have a choice, buy whole olives and pit them yourself.
Packing is either in brine, in oil, in vacuum packs, or pasteurised in jars and tins. Pasteurisation buys years of shelf life at the direct cost of texture and freshness — it is why a supermarket jar tastes flat next to the same olive from a bar.
The single best predictor of a good table olive is not the country on the label. It is whether it was fermented or chemically shortcut, and whether it has been heat-treated since. Naturally fermented, unpasteurised, whole, sold from brine with fast turnover — that is the olive worth buying, whatever the variety.
Buying and keeping table olives
- Prefer naturally fermented olives to lye-processed ones where you can — more flavour, more phenolics, a pleasant bitterness.
- Buy whole rather than pitted. Pitted olives soften and lose flavour into the brine.
- Buy from a fast-moving olive bar, not a warm tub sitting under lights all week.
- Keep them submerged in their brine, cold. Olives exposed to air above the liquid spoil first.
- If they are too salty, rinse or briefly soak them; dress with fresh oil, lemon peel, herbs or garlic yourself.
- Uniformly jet-black, perfectly smooth olives were made black. Nothing wrong with them, but they are not ripe fruit.

Why can’t you eat olives straight from the tree?

The trade fact that changes how you shop is that pitting is done for the packer, not for you. A machine punches the stone out, the flesh tears slightly, brine floods the cavity, and from that moment the olive is softening and leaking its flavour into the liquid. Whole olives from the same batch will still be firm and tasting of themselves months later. It costs you thirty seconds with the flat of a knife to pit them at home, and the difference is the single easiest upgrade available at an olive counter. The same logic applies to stuffing : an olive stuffed with a paste is usually one that was not good enough to sell whole.
