Yemen is not a country most people associate with olives, and for most of its territory that instinct is right — it is too hot and too dry. But Yemen has mountains, and the highlands change everything. At altitude the winters are cool enough for olive flowering and the summers less punishing, which is why olive cultivation has been introduced and encouraged in the highland governorates as part of a broader search for drought-tolerant, high-value crops.

What actually gets taught — and what matters most

A serious olive extension course covers the whole cycle, but the lessons are not equally valuable. In my experience, the ranking is remarkably consistent wherever you go.

Picking date is the single biggest quality decision a grower makes. Pick too early and yields are low but the oil is green, bitter and full of antioxidants. Pick too late and yield rises while flavour, stability and shelf life fall away. Most inexperienced growers pick too late, because they are paid by weight and the fruit keeps getting heavier. Why training beats equipment

Development programmes love equipment, because equipment can be photographed and inventoried. But a modern mill fed with fermented, bruised, four-day-old fruit produces bad oil with great efficiency. The equipment cannot recover what the harvest destroyed. Conversely, a modest traditional mill fed with clean fruit picked that morning can produce genuinely good extra virgin.

That asymmetry is why extension work — advisers who visit groves, demonstrate pruning cuts, argue about picking dates — delivers a better return than almost any capital investment in a young olive region. It is also why it is chronically underfunded: nobody opens a training course with a ribbon.
