Turning olives into oil is a race against time, heat and oxygen — and, increasingly, a question of how cleanly a mill can run. From the New World groves of Chile to the ancient presses of the Mediterranean, here is what actually happens inside, and why ‘green’ mills matter.

People picture olive oil being made in some timeless, romantic way, and the roots are ancient — but a good modern mill is a fast, clean, surprisingly high-tech operation. It has to be, because from the moment an olive leaves the tree, the clock is running: quality starts to slip within hours. New World producers like those in Chile — a long ribbon of Mediterranean-climate land down South America’s spine — often built their mills from scratch with exactly this in mind, which makes them a clean window onto how oil is really made.

The race from grove to press

The single biggest quality lever is speed. Olives bruise, and bruised fruit starts to ferment and oxidise, so the best mills press within hours of picking — sometimes the same day. Everything else follows from protecting the fruit and the fresh oil from its three enemies: time, heat and oxygen. A mill built beside its own groves, milling its own fresh fruit fast, has a head start no amount of clever equipment can fully replace. This is why ‘estate’ and ‘freshly milled’ are not just marketing words.

What ‘cold extraction’ really means

Inside, the process is mechanical, not chemical: the olives (stones and all) are washed and crushed to a paste, the paste is slowly stirred (malaxed) to let tiny oil droplets merge, and then the oil is separated out — today usually by centrifuge. The crucial quality term is cold extraction (or ‘cold pressed’): keeping the paste below a set temperature so no added heat is used to squeeze out more oil. Heat lifts yield but strips flavour and those valuable polyphenols. A good mill deliberately leaves some oil behind to keep the rest excellent.

The green problem nobody sees

Here’s the part the pretty bottle never mentions: milling makes a lot of by-product and waste. For every litre of oil you get a great deal of pomace (skins, stones and pulp) and, in traditional systems, olive mill wastewater — a dark, acidic, polyphenol-laden effluent that can seriously pollute soil and rivers if just dumped. This is a genuine environmental headache of the trade. Modern ‘eco’ mills tackle it: two-phase systems that cut water waste, pomace turned into biomass fuel, compost or animal feed, pits burned for energy, water and power carefully managed.

Why a clean mill is often a good-oil mill

The encouraging thing is that environmental care and quality tend to travel together. A mill that invests in running cleanly — managing its waste, its energy, its water — is usually a mill that also invests in pressing fast and cold, because both come from the same mindset of doing the job properly rather than cheaply. So a producer proud of its green credentials is often, not always, worth a taste. It’s a decent (if imperfect) proxy for care.

What to look for as a buyer

  • Favour estate or freshly milled oil — short grove-to-press time is the quality foundation.
  • Look for ‘cold extracted’ / ‘cold pressed’ and a recent harvest date.
  • New World mills (Chile, Australia) are often modern and fast — worth exploring.
  • A mill that manages its waste and energy usually cares about its oil too.

The best mills I’ve known press within hours, keep everything cold, and deliberately leave oil behind rather than heat the paste to wring out more. And the bit the marketing hides — the pomace and the dark, polluting wastewater — is exactly where a serious producer shows its hand: clean up your waste and you’re usually the kind of operation that also treats the oil right.
