Fusty, musty, winey, rancid: the chemistry of off-flavours

An oil is not ‘extra virgin’ just because it is olive — it must also taste clean, with no defect. Four faults do most of the damage, and each is a specific chemical story: olives left to ferment, mould in the mill, vinegar bacteria, or plain oxidation. Learn them and a tasting glass becomes a diagnosis.

People assume the difference between extra virgin and the cheaper grades is a matter of taste in the loose sense — nicer, fuller, more expensive. In fact the line is drawn by a trained panel looking for defects. A genuine extra virgin must be free of them; even a faint recognisable fault demotes it to a lower class, whatever its chemistry says. And the common faults are not vague — each has a definite cause you can trace back to the grove or the mill.

Fusty: the fermentation fault

The most common defect of all begins before the oil even exists. Olives picked and then left heaped in bags or bins for days start to ferment without oxygen, and micro-organisms throw off compounds that carry straight into the oil. The result — the fusty defect — smells of sweaty, stale paste; tasters reach for words like rotting olives or worse. It is almost always a sign of the same failing: fruit milled too slowly after picking. A well-run mill presses within hours precisely to avoid it.

Musty and winey: mould and vinegar

Two more faults come from the wrong microbes. The musty defect is mould: it appears when damp or dirty fruit grows fungi before milling, and the oil smells of damp cellar, cardboard or old hay. The winey-vinegary defect is different chemistry again — fermentation with air, producing acetic acid and ethanol, so the oil smells sharp and sour, of vinegar or even nail varnish. Both trace to fruit or equipment that was not clean and quick. They are faults of hygiene and haste, not of the olive itself.

Rancid: the one that finds every oil

The last of the big four is the one that eventually threatens every bottle, even a flawless one: rancid. This is oxidation — oxygen, helped by light and heat, breaking the fats down into stale, waxy, cardboard-like off-notes. Unlike the other three it is not a fault of the harvest but of time and storage, and it is the reason a good oil left open on a sunny shelf slowly dies. It is also the fault most people have tasted without naming, because so much supermarket oil is quietly past its best.

  • Extra virgin means zero perceptible defect — the grade is about cleanliness, not just richness.
  • Most faults are fixable failings: slow milling, dirty fruit, sloppy storage — not bad luck.
  • Learn rancid first; it is the one lurking in half-forgotten supermarket bottles.
  • Buy fresh, store cool and dark, and use it up — you cannot cure a defect, only avoid causing one.

What causes the fusty defect?
