Oxidative stability: how long an oil can fight back

Freshness dates on olive oil are guesses. The oxidative-stability test replaces the guess with a measurement: heat the oil, blow air through it, and time how long its natural defences hold before oxidation runs away. The answer, in hours, tells you a great deal about what is really in the bottle.

Every olive oil is, from the moment it is pressed, in a slow race against oxygen. Air, light and heat pick at its fats and flavour compounds until, eventually, it turns stale and rancid. Some oils lose that race in months; others hold out for well over a year. The difference is not luck — it is chemistry, and there is a standard test that measures it directly instead of leaving it to a printed date that nobody can vouch for.

Ageing an oil on fast-forward

The workhorse method is called the Rancimat test, and the idea is brutally simple: take a small sample, hold it at a set high temperature — 110 degrees Celsius is the usual choice — and bubble a steady stream of air through it. Oxidation that would take months at room temperature is forced to happen in hours. For a while the oil’s own antioxidants absorb the attack and little changes; then their defences are exhausted and oxidation suddenly races away, dumping acids into the air stream. The time up to that turning point is the induction time, measured in hours. Longer is better.

What buys those hours

Two things above all decide how long an oil holds out. The first is its load of natural antioxidants — the phenols and tocopherols that throw themselves in front of the oxygen. A robust, phenol-rich extra virgin from a peppery cultivar will post a far longer induction time than a soft, mild one. The second is the fatty-acid profile: oleic acid is relatively hard to oxidise, while the polyunsaturated fats are fragile, so an oil high in oleic acid starts with a structural advantage. A good extra virgin often clears ten hours or more at 110 degrees; a tired or fragile oil folds far sooner.

The number the label is scared of

Here is why you rarely see stability figures on a bottle. A best-before date is cheap and reassuring; a real induction time is a measurement that can embarrass a weak oil. An oil can be perfectly genuine yet fragile — mild, low in phenols, quick to fade — and its stability number would say so plainly. Producers of serious, robust oils sometimes quote it with pride; producers of soft supermarket blends almost never do. When you can find the figure, it is one of the most honest predictors of how long your oil will actually stay good.
