Sterols: the fingerprint that catches fake olive oil

Sterols are the plant world’s fatty relatives of cholesterol, and each oil carries them in its own fixed proportions. Olive oil’s sterol fingerprint is so consistent that regulators use it as a lie-detector: get the numbers wrong and the oil is not olive, however it smells.

Alongside the squalene and the phenols in olive oil’s minor fraction sits a family of compounds called sterols — the plant kingdom’s structural cousins of the cholesterol in animal fat. They do useful things in a living cell, but for anyone worried about fraud their real value is forensic. Every oilseed lays down sterols in its own characteristic ratios, and those ratios barely move with harvest or region. That makes the sterol profile a fingerprint: a way to prove what an oil is, quite apart from what a label claims.

Numbers that do not lie

A genuine olive oil carries a total sterol content of at least about a thousand milligrams per kilogram, and the great majority of that — well over ninety per cent — is beta-sitosterol and its close relatives. What matters just as much is what should be scarce. Campesterol, for instance, is kept low in olive oil but runs high in many seed oils; regulators cap it at around four per cent for that very reason. Brassicasterol, almost absent in olive oil, is a giveaway for rapeseed. Read together, these limits box olive oil into a corner no ordinary seed oil can occupy.

How it catches a cheat

Suppose someone stretches an expensive extra virgin with a splash of cheap sunflower or soybean oil. The taste might survive a casual sniff, and the fatty acids can be nudged to look plausible. But the sterol ratios are far harder to fake — the intruder oil drags campesterol up, or pushes an unusual sterol into view, and the profile no longer matches olive. This is one of the quiet workhorses behind the fight against adulteration: it does not rely on flavour at all, only on chemistry that the fraudster cannot easily edit.

Where honest oils get caught out

The catch — and it is a real one — is that nature occasionally wanders outside the box. Some legitimate cultivars and some tough growing years produce oils whose campesterol or delta-7-stigmastenol drifts close to a limit, and an honest oil can be flagged unfairly. That is why the rules build in secondary checks — the apparent beta-sitosterol to campesterol ratio, for instance, must clear a high threshold — so an unusual but genuine oil can still be cleared. The lesson is that a fingerprint is powerful but not infallible, and a single odd number is a reason to look harder, not to condemn.

The right instinct with a borderline number is to investigate, not to condemn — and the right instinct with a wildly wrong one is to walk away, whatever the label promises.
