Squalene: the hidden hydrocarbon in olive oil

Squalene is the quiet giant of olive oil chemistry: a light, slippery hydrocarbon that makes up the great majority of the unsaponifiable fraction, gives the oil none of its taste, and yet quietly helps it resist going off. Here is what it is, how much you get, and why the marketing rarely mentions it.

Olive oil is roughly ninety-nine per cent fat — the triglycerides that carry its calories and most of its fatty-acid character. The last one per cent or so is a crowded little world of ‘minor’ compounds: the phenols that bite, the tocopherols that guard, the pigments that colour. The biggest single resident of that world is something most people have never heard of: squalene, a simple hydrocarbon (thirty carbons, six double bonds) that carries no taste, no smell and no colour, yet outweighs every phenol and vitamin in the bottle many times over.

The largest thing you cannot taste

Chemists split the oil into two parts: the part that turns to soap with alkali (the fats) and the part that does not — the unsaponifiable fraction, which is only about half a per cent to two per cent of the oil. Squalene dominates that fraction, commonly cited at anywhere from about forty per cent to seventy per cent of it. In plain figures, virgin olive oils typically carry something in the region of two to eight grams of squalene per kilogram, and cultivar and ripeness swing it widely. No other common food oil comes close: olive oil is, in effect, the richest everyday dietary source of the stuff.

What it quietly does

Squalene is an intermediate the plant uses on the way to building sterols, so it is a natural part of a living fruit’s chemistry, not an additive. In the bottle it behaves as a mild sacrificial antioxidant: it is itself readily oxidised, so it soaks up some of the attack that would otherwise fall on the more precious fats and flavour compounds. It is not the headline guardian — the phenols and tocopherols do more visible work — but it is part of the reason a good extra virgin keeps its poise for a year or more rather than turning within weeks.

Why refining is the enemy

Here is the part a ‘light’ or refined oil will never print on the label. The industrial refining that turns a defective oil into a bland, sellable one — high heat, bleaching earth, deodorising steam — carries off a large share of the squalene along with the phenols and much of the aroma. A cold-pressed extra virgin keeps most of what the fruit made; a refined oil arrives stripped. So squalene is, in its silent way, another marker of the gap between real extra virgin and the industrial article — even though you will never taste it directly.
