Behind every gnarled grove and every bottle of oil stands a wild ancestor: the oleaster, a tough, spiny shrub of rocky Mediterranean hillsides. Domestication tamed it into a crop, but the wild olive never went away — and it explains almost everything we love about the tree.

The wild olive — Olea europaea var. sylvestris, the oleaster — is a tough, often spiny shrub or small tree bearing tiny, bitter, low-oil fruit. It thrives untended on dry, rocky Mediterranean slopes where little else will, and it is the direct ancestor of every cultivated olive on the planet. Domestication, which archaeological and genetic evidence places at roughly 6,000 years ago in the eastern Mediterranean, slowly selected trees for larger, oilier fruit and fewer thorns — turning a wild survivor into the crop that would feed and light the ancient world.

What domestication actually changed

It helps to be precise about what humans did and did not do. They did not invent the olive; they edited it. By taking cuttings and grafts from the trees that happened to bear the biggest, oiliest, least bitter fruit, and propagating those, growers nudged the species over millennia toward usefulness. The wild oleaster is small-fruited and thorny because those traits help it survive; the cultivated olive is plumper and gentler because we favoured the individuals that suited us. The genetics underneath are barely changed — which is why a cultivated tree, left alone, drifts back toward the wild.

The wild form never disappeared. Oleasters still grow across the Mediterranean, and growers still put the wild olive to work: prized cultivars are commonly grafted onto hardy oleaster rootstock, marrying the toughness of the wild root below to the fine fruit of the chosen variety above. And when a grove is abandoned, it often reverts — suckers from the base and seedlings from dropped fruit grow back small-fruited and scrubby, the tree quietly returning to where it began. Tame it and it feeds you; neglect it and it goes feral.

Why the oleaster explains the olive

Everything we admire about the olive traces to that wild root. Its legendary drought-hardiness, its knack for poor, stony soil, its near-immortal ability to resprout from a burnt or cut stump — none of that was engineered by us. It is the birthright of a desert-edge survivor. Domestication gave us the oil; the oleaster gave us the tree. Remember that the next time you see a battered old olive shrugging off a drought that kills everything around it — you are looking at the wild still living inside the cultivated.
