The Science of Malaxation Time and Temperature

Most people picture olive oil as something pressed, a sudden squeeze. The truth is gentler and slower. Between crushing and extraction sits malaxation: the unhurried kneading of olive paste in a trough, and it is here, in a balance of time and temperature, that the character of the oil is largely won or lost.

Crush olives and the oil does not all run free — much of it stays locked in tiny droplets bound up with water and fruit tissue. Malaxation is the patient answer: the paste is stirred slowly so those droplets meet and merge into pools big enough to separate out. Stir too briefly and you leave oil behind in the pomace, hurting yield; stir long enough and you free more of it. But the same patient mixing exposes the paste to air and warmth, and there is the catch. The miller is not just chasing oil — they are steering flavour and the health-related compounds at the same time, and the two goals pull against each other.

The time-and-temperature trade-off

Heat and time both raise yield, which is why the law caps temperature: the term ‘cold extraction’ usually means the paste was kept below about 27°C. Stay cool and brief and you protect the fragile aromas and the bitter, peppery polyphenols that mark a fresh, lively oil — but you may leave a little oil in the paste. Push warmer and longer and you wring out more oil, while quietly oxidising those same delicate compounds and flattening the taste. Studies of long malaxation have measured striking losses — extending the mix well past the sweet spot can shed a large share of an oil’s polyphenols. A careful mill chooses cooler, shorter malaxation and accepts slightly less oil for a far better product.

Why cooler and shorter usually wins

The economics are the whole story. Every extra degree and every extra minute is more oil in the tank, so the commercial pressure runs one way: toward warmth and time. A mill that resists it — that keeps the paste cool and the mixing brief — gives up real yield for the sake of aroma and polyphenols, and that restraint is part of why honest oil costs what it does. There is no free lunch here. A bright, peppery oil and a rock-bottom price rarely come from the same trough.
