Rosemary and Garlic Marinated Olives

Olives, a favorite cocktail party nibble, become even tastier after soaking in a flavorful vinaigrette.

Start to Finish: 1 days 10 min
Makes: 16 servings

  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 teaspoon grated lemon peel
  • 4 garlic cloves, thinly sliced
  • 4 sprigs fresh rosemary, cut up
  • 1/2 cup coarsely chopped red onion
  • 1/2 cup pitted green olives
  • 1 (6-oz.) can pitted ripe olives, drained
  • 1 (6-oz.) jar pitted kalamata olives, drained
  1. In medium nonmetal bowl or resealable food storage plastic bag, combine oil, vinegar, lemon peel, garlic and rosemary; mix well. Add onion and olives; stir gently to mix. Cover bowl or seal bag. Refrigerate at least 24 hours.
  2. To serve, remove olives from marinade with slotted spoon; place in serving bowl. Reserve marinade for later storage of olives. Serve with decorative toothpicks or cocktail forks.

Sos Cuetara declines comment on reported interest in Italian olive oil buy

The Negocio newspaper reported that management is in negotiations with Unilever PLC over a possible acquisition.

The report gave Bertolli and Dante as possible targets for a bid from SOS Cuetara, which last month bought Friol Italia, an Italian unit of Unilever, for 33.25 mln eur.

Green Olives For Hiccups

I have been meaning to write you about this for a long time. I have used one or two green olives for hiccups for many years, as have all my family members.

I don’t know why it works; it just does. It stops them almost immediately. It even worked on a friend who had been through surgery and had suffered for three weeks until I gave him an olive. Have you ever run across anyone else who has used this? I’m rather curious as to why it works.

We have been collecting hiccup remedies for more than 30 years, but this is the first time we have heard of using green olives. Most hiccup remedies work by stimulating the phrenic nerve at the top of the hard palate. Chewing crushed ice or swallowing a spoonful of granulated sugar or ice cream seems to interrupt the hiccup reflex. Perhaps the green olives work on a similar principle.

The olive tree pest problem in Butte County

Olive trees, outside of the cultured orchard environment are a pest and weed issue of which there are only a few examples. Compared to the worst of noxious weeds, the plant is not particularly invasive, however, they do escape and can become a well-established and persistent non-native, displacing native species and they are expensive to remove. The more significant problem is the insect and disease pests that the neglected, abandoned, or feral olive trees harbor.

Non-native orchard trees, of any kind, if not cared for, become a noxious pest because they are a source of re-infestation and re-infection to the adjacent active agriculture. This situation results in the continual requirement for pesticide applications in the active orchards in order to maintain control over the reoccurring pests.

The Olive Fruit Fly (OLFF) introduced into California in 1998, is considered the most devastating insect pest of the olive industry in the Mediterranean region, and now in California.
