Beef burger with olives and feta

Ingredients:
- 450g beef mince,
- 2 tablespoons fresh breadcrumbs,
- 1/3 cup crumbled feta,
- 2 tablespoons chopped Oil Cured Black Olives,
- 1 lightly beaten egg,
- 1/2 small finely chopped red onion,
- 6 burger buns,
- whole egg mayonnaise,
- baby rocket leaves,
- char-grilled capsicum,
- 1 lightly beaten egg
Method:
- Line a baking tray with non-stick baking paper,
- Place beef mince,fresh breadcrumbs, crumbled feta, chopped black olives, lightly beaten egg, finely chopped red onion, salt and cracked black pepper in a large bowl and mix until well combined,
- Divide the mixture into 6 portions and shape each portion into a flat patty,
- Place patties on prepared tray and refrigerate for 15 minutes,
- Heat a non-stick frying pan over medium heat,
- Cook the patties, in batches if necessary, for 3-4 minutes each side or until cooked through,
- Split burger buns and lightly toast then spread with whole egg mayonnaise,
- Place the bases of the buns on serving plates and top with patties, baby rocket leaves, char-grilled capsicum and remaining bun,
- Serve immediately.
