Maroc, Huile d’olive: Les industriels dépités

Ils ne savent plus où donner de la tête. En cause la longue chaîne d’intermédiaires et une spéculation à la règle qui empêchent les industriels marocains de pouvoir faire des prévisions fiables.

Cet état des faits avait réussi, l’année dernière à porter le prix de l’huile d’olive à 50 DH le litre sur le marché international, avant de baisser de 50% au bout de quelques mois. Sur le marché local, au même moment, il est passé de 8 DH à 4 Dh au prix de gros. Pour réguler ce marché, à défaut d’une vraie politique tant promise, les industriels recourent au fonds dit capital oléa lancé par le CIH, visant à mettre en place des projets intégrés (production-transformation-commercialisation) dans des fermes de 2.000 ha et barrer ainsi la route aux intermédiaires. Le Maroc produit à peine 90.000 tonnes par an…

Jewish volunteers help Palestinians harvest crops

The day is hot and dusty on this West Bank hillside, but 53-year-old Fuad Amer moves with the energy of a man half his age, stripping the fruit from his olive trees in giant handfuls, plucking others from the high branches with a surgeon’s care.

His enthusiasm is understandable. This is the first time in four years that Amer has been able to harvest his olives.
Last year, he says, Jewish settlers set fire to his olive grove and destroyed his harvest. Before that, gun-toting settlers forced his family from the grove when they started picking. Israeli authorities, trying to avoid further confrontations, ordered him to stay away, Amer says, and the settlers helped themselves to his olives.

But this season, an Israeli high court decision granting Palestinian farmers protection from settler violence means that Amer will be able to harvest the olives from his 60 trees.

Hundreds of Israeli soldiers and police are patrolling stony hillside groves near Jewish settlements in the West Bank, vowing to keep the peace. Palestinians, usually fearful of Israeli authorities, are welcoming their presence.

“We are happy that the army is here. We feel like we’re being protected,” said Amer, who has been harvesting his olives within shouting distance of the hilltop settlement of Bracha. So far, he says, there have been no problems.

Surimi et caviar d’olives noires

Préparation : 10 mn.
Pour 4 personnes :
2 boîtes de médaillons de surimi (300 g),
200 g d’olives noires dénoyautées,
4 anchois,
1 gousse d’ail écrasée,
1 jus de citron.

Hacher le plus finement possible les anchois et la gousse d’ail, puis hacher au couteau les olives noires. Les placer dans un bol avec les anchois et l’ail.

Ajouter, la moitié du jus de citron. Goûter l’assaisonnement. Ajuster avec le jus de citron en fonction de vos envies.

Disposer les médaillons sur une assiette de présentation ou un petit plateau. A l’aide d’une petite cuil. à café, dresser sur le centre des médaillons le caviar d’olives en rond ou en petites quenelles.

Puis servir très frais avec un petit vin blanc d’Alsace.

Une opposition dans les goûts que l’on retrouve dans les couleurs. La douceur du surimi et les olives noires très typées offre un mélange très intéressant.

L’avis de la nutritionniste : Protéines, vitamine E et acide oléique.
