The magic of olive oil

By Karen Johnson,

Fruity to floral with just a hint of spiciness. There can also be a trace of sweetness or even a bitter bite.

Can any food have all those qualities?

Absolutely. This food is “heart-healthy” too.

So, what is it?

Olive oil, that wonderful product from the fruit of the olive tree.

Much of the olive oil on our markets’ shelves comes from groves in California, but the original fine oils come from Italy, Greece, France and Spain. The flavor can range from intense to mild, depending on the area of origin. Generally, the deeper the color, the more intense the flavor.

As with the wide range in flavor, the price can go from moderate to sky-high. Extra-virgin olive oil has the most assertive flavor and is the priciest. It is the finest quality with the fruitiest taste. Extra-virgin oil has been cold pressed without the use of heat or chemicals. Following extra-virgin are virgin (also called superfine or fine) and then pure olive oil which has less flavor.
